COOKIES FOR NEW MOMS

Why? Because moms deserve treats! These cookies are seriously delicious, and are especially appropriate for New Moms due to their high levels of healthy fat, Omega 3's, and oats and Brewer's yeast which help to promote milk production. How cool is that? I just made some for my sis who is going to be a mom for the second time, today! Also, full disclosure; I just ate 2 for breakfast...and they were super deeeelish!

Makes about 20 big cookies.

2 cups of Whole Oats (for gf, use Trader Joe's GF Oats)

1 cup Almond flour*

4 T. chia seeds (or the chia mix from Trader Joe's)

4 T. buckwheat grouts (find in bulk section of health food sections.stores)

3/4 cup Hemp Seeds

1/2 cup flax meal (aka. ground flax seeds)

2 T. Brewer's Yeast

1 t. baking soda

1 cup dark chocolate chips or raisins

8 T. coconut oil, melted

1/4 cup water

1 t. cinnamon

2 t. sea salt

3/4 cup maple syrup

2 eggs

1 t. vanilla

1. Preheat oven to 350 degrees F, and line a baking sheet with parchment paper.

2. In a large bowl, combine the oats, almond flour, chia, buckwheat, hemp seeds, flax meal, brewer's yeast, baking soda and dark chocolate chips (or raisins, if using). In another bowl, whisk together the melted coconut oil, water, cinnamon, sea salt, maple syrup, eggs, and vanilla.

3. Stir the wet mixture into the dry, and fold with a baking spatula until just combined.

4. Spoon out onto the lined baking sheet and bake for 8-12 minutes, depending on the size of the dough blob. :-) Remove until just cooked, but still a little bit soft in the middle. Let cool and devour!

Nutty tip: Did you know that Almond flour IS the same thing as Almond meal? True story. You will find some almond flour with brown specs (which means that the skins were left on the almonds), and others which are pure white (this is often referred to as "blanched" almond flour, which is typically pretty fancy, more expensive, and used to make French Macaroons. Both are great, just evaluate which type you want based on your recipe. High Five !
