ORANGE YOU GLAD YOU MADE THIS CAKE?

When is the last time you made an awesome recipe with only 5 ingredients? Still thinking.... If you are in the mood for a sneaky little treat, this Orange Almond Cake is the ticket. Other than the tiny 5 ingredient list, all that you need is a bit of time. You literally boil 2 whole oranges for about 2 hours (until they are soft), and then you only need a few more minutes until that baby is in the oven. While the oranges boil, you can go and weed your garden, go for a run, take a bath, or listen to some good tunes! just saying. Feel free to substitute any type of sugar that you prefer (coconut sugar, xylitol, stevia, etc.), and even reduce the given amount if you prefer. Whatever you choose, this cake is best enjoyed with a cup of tea (sometimes referred to as a 'cuppa'), in the morning, afternoon or anytime when you feel like a fulfilling treat. So, here it is:

ORANGE ALMOND CAKE 2 large Oranges 6 Eggs 2 Cups almond flour (same as almond meal) 1 Cup Honey 1 teaspoon baking powder -Grease and line a Round cake tin with parchment paper and set aside. Place oranges in a medium pot and cover with water. Bring to a boil and reduce to a simmer for 2 hours, or until they are very soft and falling apart. Strain the oranges and let cool. Cut the oranges, remove the pips and rub through a sieve (colander), saving pulp that pushes through the sieve. In a bowl, beat eggs and fold in all other ingredients, including the pulp. Pour into cake tin and Bake at 375 degrees F for about 1 hour. Let cool and devour or refrigerate. *Note that this cake turns out pretty dense (from the almond flour, yum!) and will last for a couple of weeks in the fridge. I actually prefer it after a few days of sitting in the fridge, once the flavors have a chance to meld and get super yummy. -The photo above shows the cake rolled into little cake balls and dipped into chocolate. Super naughy I know, but soooo nice!
